Grilled salmon with pickled vegetables with Forvm Chardonnay

20 gr onion
20 gr carrot
20 gr green beans
30 gr seasonal mushrooms
1 sprig of thyme
200 gr Torclvm olive oil
20 gr Forvm Chardonnay vinegar
200 gr salmon
Salt and pepper
2 large garlic


  1. Put the following ingredients in a saucepan: onion, garlic, carrot, green beans, mushrooms, thyme and cover everything with Torclvm extra virgin olive oil.
  2. Confit everything at 65 degrees until the vegetables are done (15 minutes).Then raise the heat and add the FORVM Chardonnay vinegar for 5 minutes.
  3. Take the salmon, salt it and add pepper to your taste and grill it for 3 minutes on each side.
  4. Then put the vegetables back on the fire and when they start to boil, introduce the salmon and now we are ready to assemble the dish.
