The Xarel·lo de Mar microvinification, among the best Xarel·lo white wines of the Penedes according to the Peñín Guide

One of the microvinifications of Avgvstvs Forvm Winery is the star of a new article in the Peñín Guide, the publication that is considered the most complete guide to Spanish wines. In a report analyzing the best wines from the DO Penedes, the guide highlights the Xarel·lo de Mar white wine from Avgvstvs Forvm as one of the essential products, which also values with an excellent rating .

The Xarello variety has been traditionally used in the Penedes as one of the main types of grapes in the production of cava and other types of sparkling wines. From the Peñín Guide, however, they emphasize its use in the production of white wines as one of the keys in the conversion of the DO Penedes. In this way, the experts in the guide look for examples of wineries that, from this variety, have sought a differentiated product, but true to their origin. A white wine from vines of more than 50 years

In highlighting the Xarel·lo de Mar microvinification, the guide highlights as Avgvstvs Forvm Wineries bet on these limited-edition wines from small plot productions with varieties especially important for the winery’s history and tradition. In this case, this white wine is made 100% with a Xarel·lo variety that has been growing for more than 50 years, less than two kilometres from the sea, on shallow clayey soils.

For the Peñín guide, however, the most important thing is the combination of aging methods used to obtain this Xarel·lo de Mar, a white where the production less than 1,600 bottles. Thus, aging in stainless steel vats on its lees is combined with French oak barrels, to end up with four years in the bottle.
